Izakaya Night Vol. 6 – A One-Night Collaboration with Urakasumi × Chef Hiroki Odo

THE GALLERY by Odo is delighted to announce the sixth installment of our signature monthly “Izakaya Night” on Friday, November 7th, 2025.

“Izakaya Night” is a one-night-only event where THE GALLERY by Odo curates an exclusive pairing of Japanese sake and original dishes created by Chef Hiroki Odo and his team. Each volume celebrates craftsmanship, terroir, and the spirit of Japan’s culinary culture through thoughtfully selected sake and seasonal ingredients.

For Vol. 6, we are honored to welcome Urakasumi sake Brewery Saura Co., Ltd. from Shiogama City, Miyagi Prefecture—a historical brewery founded in 1724 and renowned for producing the sacred “Omiki” sake for the revered Shiogama Shrine. Led today by the 13th-generation owner Mr. Koichi Saura, Urakasumi has built its global reputation for elegant, balanced sake that embodies the richness of Miyagi’s terroir and the mastery of its legendary Toji brewers.

At this event, we will feature a special lineup of Urakasumi’s celebrated sake:

Urakasumi Junmai – A flexible and complex junmai offering balanced umami, gentle sweetness, and toasted nut aromas. Delightful both chilled and warm.
Urakasumi Zen Junmai Ginjo – The brewery’s iconic 1973 release, celebrated for its soft melon aroma, creamy texture, and harmony of flavor.
Urakasumi M Black Label Junmai Daiginjo – A limited-edition masterpiece aged for four years using only the heart of the sake mash; refined and delicately layered.

Each selection reflects Urakasumi’s philosophy of “sharing sake culture through local terroir,” rooted in centuries of brewing tradition and an enduring connection to the sea and shrine of Shiogama.

To complement these distinctive sakes, Chef Odo and his team will present a seasonal à la carte menu designed to harmonize with the subtlety and depth of Urakasumi’s flavors—drawing inspiration from the sea and land of Miyagi, interpreted through the modern sensibility of Odo’s kitchen.

“Sawara Tataki” - ponzu with fresh garnish  

“Braised Wagyu Beef  Tongue” - red wine reduction sauce with potato puree  

“Truffle Dashimaki Tamago” - Japanese egg omelet with shaved truffle

“Autumn Fruit with Tofu Sauce” - osetra caviar and shiso flower

“Toroshin” - seaweed soy sauce with Hokkaido uni
