Izakaya Night Vol. 7 – A One-Night Collaboration with Kikusui Sake × Chef Hiroki Odo

THE GALLERY by Odo is pleased to announce the third installment of our monthly “Izakaya Night” series on Wednesday, December 3, 2025.

“Izakaya Night” is our one-night-only dining experience where we spotlight an exceptional Japanese brewery and pair their sakes with original dishes crafted exclusively for that evening by Chef Hiroki Odo and his team. Each event offers a rare opportunity to enjoy unique, often hard-to-find sakes alongside inspired seasonal cuisine in an intimate setting.

For this edition, we are honored to welcome Mr. Shunsuke Takasawa, Global Sales Representative of Kikusui Sake Co., Ltd., a historic brewery from Niigata Prefecture founded in 1881. Known for pioneering Japan’s first commercially available unpasteurized sake (“Funaguchi”) and for reviving heirloom sake rice Kikusui from near extinction, Kikusui continues to redefine what modern sake can be through craftsmanship, innovation, and a deep commitment to culture.

Throughout the evening, guests will taste five exceptional sakes specially selected for this event:

Featured Sakes from Kikusui Shuzo

• Kikusui Perfect Snow Nigori (21% ABV)
A bold, full-bodied nigori with dynamic sweetness, steamed-rice richness, and an unforgettable finish. Japan’s #1 best-selling nigorizake.

• Kikusui Shiboritate Junmai Nama Genshu (17.5% ABV)
Clean, dry, and sharply defined with subtle umami. Enhances delicate dishes and beautifully balances richer flavors.

• Kikusui Sakamai Junmai Daiginjo Genshu (17% ABV)
A powerhouse of fresh fruit aromas, herbal notes, and complex depth. Brewed with the revived heirloom rice Sakamai Kikusui—once believed extinct.

• Kikusui Junmai Daiginjo (15% ABV)
Elegant, light, and gently aromatic. Crafted from rice polished to 40%, offering a refined, intentional expression of Niigata terroir.

• Kikusui Kuramitsu (15% ABV)
A pure and impeccably clean Junmai Daiginjo with silky texture and a delicate ginjo bouquet. Polished down to an extraordinary 23%.
