Izakaya Night Vol. 8 – A One-Night Collaboration with BŌKEN × Chef Hiroki Odo

Dear Valued Guests,

Following its successful debut, THE GALLERY by Odo is delighted to announce the next installment of our popular monthly "Izakaya Night" on Wednesday, January 28, 2026.

"Izakaya Night" is a unique, one-night-only event where THE GALLERY by Odo curates a special selection of Japanese sakes and pairs them with original, one-day-only dishes crafted by Chef Hiroki Odo and his team. It's an exclusive opportunity to indulge in rare and exceptional sakes, alongside exquisite culinary creations featuring seasonal ingredients.

Come discover the perfect harmony between exceptional sake and inspired cuisine.

For our January "Izakaya Night," we are honored to partner with BŌKEN.

BŌKEN Sakes are brewed by skilled artisans from centuries old Japanese breweries. Each of their selected family-run breweries shares an exemplary dedication to best-in-class craftsmanship along with a balanced approach to innovation—one that’s steeped in experience and tradition. The result is a collection of distinctive award-winning sakes.

On this special evening, you will have the opportunity to savor four exceptional sakes from BŌKEN:

BŌKEN RINGO :
Medaille de Platine / Junmai Kura Master Paris 2024. BŌKEN Ringo enchants with its vibrant, apple-forward aroma and smooth, medium body, featuring layers of ripe Fuji apple, pear, and a refreshing citrus zest. Its clean finish and balanced acidity make it an exquisite pairing for seafood and dishes with a hint of sweetness.

BŌKEN No. 77 :
BŌKEN No. 77 offers a refreshing burst of lively acidity with bright citrus notes, balanced by a silky texture and subtle minerality. Its tantalizing combination of tartness and sweetness, alongside a crisp, clean finish, makes it an ideal companion for both seafood and rich dishes.

BŌKEN NANA :
BŌKEN Nana unfolds with a rich, earthy umami profile featuring notes of wild mushrooms and roasted grains, balanced by subtle hints of ripe pear and a touch of dark chocolate. Its velvety texture and savory finish make it a luxurious match for hearty dishes and aged cheeses.

To complement these superb sakes, our chefs have specially created exquisite pairing dishes for the evening:

Inari-zushi : Herring roe, shiitake mushroom, pickled ginger, pickled daikon radish

Nishin (Herring) : Kobu-maki

Buta no Kakuni : Scallion, burdock

Sweet Chili Buta no Kakuni : Sweet chili sauce, tomato, scallion

Chef Odo's Chicken Katsu : Chicken, chrysanthemum, snow crab, mushroom sauce
